At Christmas Eve in our family, the count of seven fishes was never an actual count. My mother made what the fish market had offered that morning and what the day allowed. We always had capitone — the large eel, grilled or fried, non-negotiable — and always baccalà, and then three or four other things depending on what looked good and what she had time for. Calamari fritti, usually. Insalata di mare if she started early enough. Sometimes clams, sometimes not. The seven was an aspiration more than a tally.

The relationship between Naples and the sea is old and practical. Pesce azzurro — anchovies, mackerel, sardines, the affordable fish — fed the city for centuries. The more elaborate preparations, the acqua pazza and the shellfish soups and the octopus dishes, grew from the same root: use what arrives, waste none of it. The sea was not romantic. It was the market.

What unites all of it is the same restraint. The seasoning is almost always identical — garlic, parsley, olive oil, white wine, tomato or no tomato — and this sameness is not laziness. It is a principle. The job of the cook is to frame the seafood, not to transform it. If the fish is good, the olive oil and the garlic are enough. The sea does the rest.

Why pesce azzurro is nutritionally significant

The small, oily fish of the Mediterranean — anchovies, sardines, mackerel, and their relatives — are among the richest dietary sources of long-chain omega-3 fatty acids, primarily EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid). These are not the short-chain omega-3 found in flaxseed or walnuts, which the body converts to EPA and DHA inefficiently. The marine versions are biologically available directly. DHA is a major structural component of brain cell membranes and retinal tissue; EPA is a precursor to anti-inflammatory signaling molecules called resolvins and protectins. The Mediterranean diet's association with lower rates of cardiovascular disease and cognitive decline is partly attributed to regular consumption of exactly these fish — not as supplements, but as food eaten twice a week, grilled or fried or marinated, the way Neapolitan households have eaten them for generations without knowing the biochemistry.
